Alphonso Mango Kairas

Mango Kairas is simple recipe made using Pulpy ripe mangoes, Jaggery and some more ingredients mentioned below.  Mango kairas is simlar to Mango Sasav which is prepared using coconut. But this mango kairas is made without coconut. Pulpy ripe mango is called as 'Ghot' in Goan local language.

Goans mostly prepare Mango sasav using coconut. But my mother always used to prepare Mango Kairas. So I am sharing this unique recipe with you all.

Ingredients:

- 2 tbsp Ghee

- 1/4 tsp Asafoetida (Hing) 

1/4 tsp Cumin Seeds 

1/2 tsp Mustard Seeds

6 Nos. Curry Leaves 

- Green Chili small piece

2 tbsp Chopped Jaggery 

- 4 ripe peeled Pulpy ripe mango

- Salt as per taste

Instructions:

Peel and cut all 4 mangoes into small pieces. Add Chopped Jaggery and add salt to it and keep it aside.

Heat the ghee in pan, add the Asafoetida (Hing), add mustard seeds. Let mustard seed crackle then add cumin seeds, curry leaves and a small piece of green chili. Saute all the ingredients very well. Now add Mango mixture into it. Cook it till the mangoes become soft and juicy. 

Then serve the dish.

Tip : You can also use ripe pulpy mango.
