Stuffed Brinjal

Stuffed brinjal is prepared using Baby Brinjals, Coconut, Onion, Ginger, Garlic and some spices. We Goans call Stuffed Brinjal as "Bharili Vaangi". This recipe tastes good with Roti, Chapati, Bread or Rice. 


Ingredients:

- 7-8 Baby Brinjals (Vaangi)

- 1/2 Coconut (Scrapped)

- 2 Cloves

- 2-3 Black Pepper

- 1/4 inch piece of Ginger

- 4 Garlic Cloves (2 finely chopped)

- 2 Medium size Chopped Onions 

- 1 tbsp Coriander Seeds

- Piece of Tamarind

- 1/2 tsp. Cumin Seeds

- 1/2 tsp. Turmeric Powder

- Salt as per taste

- Coriander Leaves for garnishing

Instructions:

Firstly cut the Baby Brinjals vertically in X shape without taking off the stem of Baby Brinjals.

To make Brinjal Masala

Fry Spices
Heat pan, add a little oil, add cloves, black pepper, a piece of ginger, 2 garlic cloves and coriander seeds. Stir it and fry for about 2-3 minutes. Remove it from gas and keep it aside. 

Fry Onion and Coconut
Now again add a little oil in the same pan, add 1 chopped onion. Fry it some time till onion becomes translucent. Now add scrapped coconut. Mix and again fry it a little. 

Now in the mixer jar, add fried spices and fried onion and coconut. Add a piece of tamarind, turmeric powder and salt as per taste. Add some water. Grind it and make a thick paste. Add salt to the paste if required.

Now add another finely chopped onion to the masala mixture. Mix it nicely. Brinjal masala is ready.

Stuff Brinjals 
Now take a part of the ground mixture masala and stuff the baby brinjals. Stuff all the baby brinjals and keep it aside. Keep some masala mixture for further process if any is left. 

Further Process
Heat pan, add oil, add cumin seeds and add 2 finely chopped garlic cloves. Saute it for a while. Now place stuffed baby brinjals. Add remaining masala mixture and add 1/4 cup of water. Cover the lid by adding a little water on top of lid. Cook till brinjals cook perfectly. Cook it on low flame. When you see brinjals cooked, garnish it with coriander leaves. Stuffed brinjal is ready enjoy it with Roti, Bread or Rice

Tip: You can add square pieces of Potatoes along with Baby Brinjals if you like.
