Ragda Patties

Ragda patties is a street food and is mostly popular in Maharashtra and Gujarat. Ragda patties is prepared using mashed potatoes, some spices and served with chutneys. Ragda patties is similar to other street food Sev puri, Bhel puri, chaats, aloo chaat etc., which is mostly served with chutneys and sev. Indian street food are known for their taste. The taste of this Indian street food are also loved by tourists.

In Goa you find this street food stall holders mostly on the beach side. They prepare various dishes Sev puri, Bhel puri, Pani puri etc., Sev puri is one of my favorite street food. I always eat Sev puri when we go out. 

This is recipe is very simple to make. Try out this recipe. 


Ingredients:

- 4 Potatoes

- 1 tsp. Ginger powder 

- Green Chilies paste

- 3 tbsp. Corn Flour

- Salt as per taste

- 1 cup White peas

- Pinch of Baking Soda

- 2 tbs. oil for tadka

- 1/2 tsp. Mustard Seeds (Rai)

- 1/2 tsp. Cumin 

- Pinch of Asafoetida (Hing)

- 1 chopped Onion

- 1 tsp Ginger Garlic paste

- 1 tsp. Kashmiri Red Chilly powder

- Some Turmeric powder

- Some Coriander powder

- Some Cumin powder

- To garnish - Some Coriander leaves, Green and sweet chutney, Red Chilly powder, Cumin powder, chopped onion and Sev.

Instructions:


To make Ragda mixture

Start your preparation night before soak the white peas overnight. Next morning drain water and add fresh water into it, add a pinch of salt and a pinch of baking soda. Cook this in pressure cooker. Put off gas flame after 4 whistles.

Tadka

Now in kadai  heat 2 tsp. oil, 1/2 tsp. mustard seeds(let mustard seeds  crackle), add a pinch of asafoetida (hing), a pinch of cumin seeds, 1 finely chopped onion and 1 tsp. ginger garlic paste. Cook it for some time. Then add 1 tsp. red chilly powder, some turmeric powder, coriander powder, cumin powder and finally add Ragda mixture. Mix all the ingredients nicely. Cook it for about 10 minutes or till it becomes little thick. Garnish it with coriander leaves.

To make Patties

Now to make patties boil 4 potatoes and keep it aside to cool down completely. Now peel the skin of potatoes and mash it nicely. Add 1 tsp. ginger powder, some green chilies paste, 3 tbsp. corn flour and salt as per taste. Now mix the ingredients nicely. After mixing make round shape patties and shallow fry it till it becomes golden brown. Fry this on a low flame.

In a plate place patties, add radga mixture over it, add green and sweet chutney, add cumin powder, sprinkle some red chilly powder, finely chopped onion, coriander leaves and sev. And your ragda patties is ready. Enjoy. 


Tip: You can also use green peas instead of white peas.
