Semolina cake is spongy cake prepared using Fresh Yogurt, Milk, Oil etc.
You can bake this cake in oven or pressure cooker or any thick bottomed pan.
So lets start.
Ingredients:
- 1/2 cup Fresh Yogurt
- 3/4 cup Powdered Sugar
- 1/2 cup Oil
- 1 1/2 cup Semolina/Rava/Suji
- 1/2 cup Flour
- 1/2 cup Milk
- Additional 1/4 cup Milk
- 1 tsp. Baking Powder
- 1/2 tsp Baking Soda
- 2 tsp Vanilla Essence
- Some additional Oil to grease Cake tin
- Pieces of Dry Fruits
Instructions:
Take Fresh Yogurt in a bowl and mix it till it becomes smooth then add
powdered sugar. Mix it nicely by whisker, spatula, or tablespoon. Now
add 1/2 cup oil and again mix it for some time till the oil and Yogurt
mixes well. After this add Semolina/Suji/ Rava and add flour mix it and
then add 1/2 cup Milk. Again mix and keep it aside for 15
minutes.
After 15 minutes add additional milk to the mixture, add baking
powder and baking soda. Mix it and finally add vanilla essence and put
some pieces of dry fruits. Grease the cake tin and put butter paper
down. Apply some more oil on butter paper. If you do not have butter
paper you can dust it using flour. Transfer the batter in greased cake
tin and tap the cake tin. Again on top add some more pieces of dry
fruits.
To bake the cake in Pressure Cooker
Use thick bottomed pressure cooker. Remove the weight valve
(whistle) and Gasket (rubber ring) from the lid. Use some salt or
sand as layer between pressure cooker and cake tin. Cover it and
bake the cake for about 30-35 minutes on low flame.
To bake the cake in Microwave Oven
Set your microwave oven on convection mode. Preheat the oven at
180° C. Then, bake the cake
for about 20-30 minutes.
When you see cake is ready please insert wooden pick in the
middle of cake, if it comes out clean the cake is ready. If not then
bake it for some more time let the cake completely cook. When the wooden
pick comes out clean keep it aside to cool down then remove the cake and
enjoy the bite of it.
Tip: You can also add Tutti Frutti instead of Dry
Fruits.
