Jackfruit Cake (Phansache Dhonus)

Jackfruit is called as 'Phanas' in Konkani. There are two varieties of Jackfruit 'Kapo'(hard and fleshy) and 'Rassal' (soft and juicy). Jackfruit cake is prepared using Rassal Phanas. The inner part of riped jackfruit is called as "Phansache Ghare" in konkani. 

Jackfruit can be use to make many dishes. The raw jackfruit is called as 'Kuvlo' in konkani. The raw jackfruit (small one) is used to make goan dish called 'Chako'. The raw outer part of  jackfruit is removed and inner part is cooked. 

There are many dishes can be prepared using jackfruit. Some dishes are phansache saath, phansachi patoli, phansachi mulka. These are some of the Goan dishes prepared using jackfruit. Idlis are also prepared by making cone of jackfruit leaves. Even the seeds of jackfruit are useful. Jackfruit curry can be made out of it. 

The other type of jackfruit (Kapo Phanas) is also used to make snacks. Hard and flashy jackfruit is used to make jackfruit chips. Jackfruit chips is most popular in South India like banana chips which is prepared by deep frying. 

Jackfruit cake is traditional dish of Goa. I learned this recipe from my Mother-In-Law. She makes this Jackfruit cake (Donus) and it tastes yumm.! The smell of this cake make you feel more hungry. I really love the smell of this cake during preparation. 

This dish is prepared using Wheat rawa, Jackfruit pulp, Coconut, Jaggery, Cardamom, Cashew Nuts and Salt. The sweetness of jackfruit makes the dish more sweet. Jackfruit cake is most famous in Goa. Most people from Goa prepare this as sweet dish.

Ingredients required to make Jackfruit Cake


- 2 cups Wheat rawa (Semolina)

- 2 tbsp. Ghee 

- 4 cups Scrapped Coconut

- 4 cups Jackfruit pulp

- 1 ½ cup Grated Jaggery

- ½ tsp. Salt

- Pinch of Cardamon (Elaichi) powder

- 5-6 Cashew nuts

Instructions to make Jackfruit Cake


First step is to roast wheat rava in ghee. Heat kadai, I prefer using thick kadai. Add ghee, and roast wheat rava. Stir it continuously till it changes its  color little.


After this put off the gas flame and keep it aside. Let it cool down completely. 

Cut the Jackfruit. Now remove all the seeds of Rassal Jackfruit and put them in the grinder(mixer) to make juicy jackfruit pulp. Please see below image. 


Then add jackfruit pulp to the roasted wheat rawa. Add scrapped coconut, grated Jaggery, salt, a pinch of cardamon powder and cashew nuts (make pieces). 


Mix all the ingredients to make batter. 


Make smooth batter. Mix all the ingredients properly.


Put it on gas flame. Cook till it thickens. Stir it continuously. Check out below video



Now grease the cake patra by ghee and transfer the thickened batter into the cake patra. Please see the below image. You can get this type of tin online or any local shop. 


Bake this for 1 hour on low gas flame. 

When you see it baked perfectly put off the gas flame. Cool it down and enjoy the slices of jackfruit cake. 
 
Tip: You can bake cake using cake tin. Steam it for about 20 minutes using double boiler method. If you have microwave you can microwave it for 30 minutes at 180°C.
