Vegetable Soup Indian

Vegetable soup is easy and quick to make. It is a combination of various vegetables.  You can make this vegetable soup with your own choice veggies. This soup recipe is made of onion, carrot, cauliflower, cabbage, tomato, macaroni etc. 

Vegetables are part of a healthy diet. Vegetable soup is very nutritious and it promotes overall health. You can easily prepare this at dinner. 

Ingredients:

- 1 medium size chopped Onion

- 1 chopped Tomato

- 1 grated Carrot

- Small piece of chopped Cabbage and Cauliflower

- Some Marconi (optional)

- 4 cups water ( based on veggies used)

- Ghee or Oil as required

- Salt as per taste

- A pinch of Black pepper powder

- 1/2 tsp Turmeric powder

Instructions:

Now first of all wash the vegetables and rinse the water. Chop all the vegetables. Now heat pot, fry onion in ghee. You can fry it in oil if you do not like ghee. Fry it nicely and add grated carrot, chopped cabbage, and cauliflower. Let carrot, cook completely when you see carrot changed its color and has become little soft, lastly add chopped tomato. Cook all the veggies completely.   

Now add water. Stir it nicely and add pieces of macaroni (optional). Cover and cook it on medium flame. All the veggies and Macaroni should become soft. 

Add salt as per taste, black pepper powder and turmeric powder.  Mix it properly. 

Serve it hot and enjoy the bowl of soup.

Tip: You can add a Maggi cube if you want, but I avoid using Maggi cubes. You can add Cornstarch to make soup thick.
